Liquid Soy Lecithin is produced from finally cleaned and filtered soybean oil. It has to be high quality in terms of color, to have standard phospholipids and low iron content. It can be used as an emulsifier in food applications such as chocolate, margarine, dairy products and cakes. It promotes blending of all ingredients, improves texture and mouthfeel, prevents sticking and enhances hydration of high-protein ingredients.
